Vinification and Maturation: Hand-harvested into small perforated crates. Reception with immediate destemming and crushing. Fermentation in stainless steel vats, with maceration at a controlled temperature of around 23ºC, with prolonged maceration. Aging in stainless steel vats until bottling.
Tasting Notes: At Quinta do Sobreiró de Cima, we selected the best Cabernet Sauvignon grapes to create this varietal. It has a ruby color, an intense aroma of ripe red fruits such as plum and cherry, with a touch of ripe bell pepper typical of the grape variety. On the palate, it is intense and persistent, balanced with a slight spicy sensation. This wine did not undergo any oak aging to highlight the character of the grape variety.
Try it With... Excellent with roast meat dishes, sausages or creamy cheeses. Serve at a temperature of 16ºC.
