Vinification and Maturation: Hand-harvested into small perforated crates. Reception with immediate destemming and crushing. Fermentation in stainless steel vats, with maceration at a controlled temperature of around 23ºC, with prolonged maceration. Aging in stainless steel vats until bottling.
Tasting Notes: At Quinta do Sobreiró de Cima, we select the best Syrah grapes, harvested late, taking advantage of the excellent ripeness of the grapes this year to create this special varietal. Deep garnet in color, it has a candied aroma of very ripe black fruit, spices, and balsamic notes typical of the grape variety. On the palate, it is intensely fruity, concentrated, with velvety tannins and a long, persistent finish. Excellent with rich meat dishes, game, or cheeses. Serve at a temperature of 16°C.
