Grape Varieties: Esgana Cão
Winemaking: The harvest was done manually into small 15 kg boxes. At the winery, a gentle pressing of the whole bunch followed. We only used the free-run juice for this wine, which fermented in used 350-liter French oak barrels.
Ageing: It happened over 11 months on top of the thin smudges, with lipstick only during the first 2 months.
Tasting Notes: Murgas Esgana Cão is a wine that uniquely combines the irreverent "personality" of the Esgana Cão grape with the characteristics imparted by the Atlantic influence and the limestone soil of the vineyards from which it originates. On the palate, it reveals restrained aromas on a mineral background, but it is in the tasting that its irreverence, strength, and depth truly shine through.
Gastronomy: It pairs well with cod dishes, baked fish, white meats, and soft cheeses. It also goes well with almond tart or apple tart. It should be served at a temperature of 10-12ºC.
