Grape Varieties: Encruzado
Tasting Notes: Crystal color, notes of white fruit and wet stone, clearly showing the profile of the surlies from two years of lees, vegetable and austere on the nose. In the mouth it has a lot of structure and an impressive volume, in which the wood toast combines perfectly with the buttery notes on the palate. A special and unique wine, which easily accompanies meat dishes such as duck rice, baked cod and traditional sausages.
Vinification: Grapes harvested exclusively from a 40 year old vineyard of Encruzado in Quinta do Ribeiro Santo. Wine lees from the 2018 vintage were selectively chosen to produce the wine of the 2020 vintage - the fermentation of the must occurred on the lees of the 2020/2021 vintages. Afterwards, the wine finished fermenting in new 500L French oak barrels. Battonage for 6 months. After bottling, the wine aged in cellar for an additional 6 months.
Acceptable Storage Time: 12 to 15 Years
