Grape Varieties: Cerceal, Arinto, Encruzado.
Tasting Note: Clean straw color, with complex notes of dry nuts. In the mouth it has a lot of structure and an impressive volume, with a persistent and evolving finish. An elegant wine, perfect for a special occasion.
Vinification: Harvest by hand. Grapes exclusively from the Ribeiro Santo Estate. Total destemming and pressing. Decantation at a low temperature for 48h in stainless steel vat. Initiated its fermentation in stainless steel vats with indigenous yeasts ending in 500L French oak barrels with battonage. Aged in 3rd fill French oak barrels for 12 months.
Pairing: Goes well with salmon-based dishes, codfish, prawn risotto, oysters, sushi. Contains sulfites.
