Designation: DOC Távora-Varosa
Grape Varieties: Cerceal Branco do Douro 100%
Terroir: Vineyards located at 700m altitude on a gentle southeast-facing slope. Soils derived from metamorphic schist series with quartz outcrops. Sandy-loam texture with some stoniness.
Winemaking: The grapes, harvested in 20kg boxes, were gently crushed in a pneumatic press after destemming without crushing. The sulfited must was immediately pumped into stainless steel fermentation tanks, where decantation and, after clarification, fermentation took place.
Fermentation: In stainless steel tanks with cooling jackets at a temperature of 16ºC to 20ºC.
Ageing: Aged in 400L/225L barrels for 1 year. Aged in bottle for at least 1 year.
Serving Temperature: Serve between 8 and 10ºC
