Designation: DOC Távora-Varosa
Grape Varieties: 100% Pinot Noir
Terroir: Vineyards located at an altitude of 700m on a gentle southeast-facing slope. Soils derived from metamorphic schist series with quartz outcrops. Sandy-loam texture with some stoniness.
Winemaking: Harvested into 20kg boxes, the grapes were gently crushed, without destemming, in a pneumatic press. Only the first fraction of the must was used, which was immediately pumped into stainless steel fermentation tanks where the base wine fermented. The wine was subsequently bottled and placed in a cool cellar for the second fermentation according to the classic method, and after aging in the bottle, the "dégorgement à la glace" was performed.
Fermentation: Stainless steel tanks with cooling jackets (base wine) at a temperature of 16ºC to 20ºC.
Ageing: Aged in stainless steel tanks for approximately 11 months. Aged in bottle on lees for 31 months. Bottling date: September 2022. Disgorgement date: May 2025.
Tasting Notes: Pale color with subtle hints of salmon, light notes of redcurrant and blackberry. On the palate it is dry, with pronounced and vibrant acidity. Good creaminess and smooth mousse.
Gastronomy: Gastronomic pairs well with dishes containing fat, fish or meat, as well as cured cheeses.
