The classic Sauvignon Blanc but with our own expression from Vinha da Fonte grapes.
Grape Varieties: Sauvignon Blanc
Tasting Notes: Citrus-coloured wine with strong mineral & vegetable aromas, typical of the grape variety and the Atlantic influence. Very fresh, complex and intense in the mouth, with a very persistent aftertaste.
Vinification: Hand harvested to boxes of 10kg, with total destemming and soft pressing.
Fermentation: Natural: 80% in used French oak barrel, 20% in stainless steel tank.
Ageing: 80%: 10 months on lees in barrels, 20%: 10 months in stainless steel tank.
Pairing: Ideal for all sea dishes, as well as pasta, salads and pizza.
Best Served: 12ºC / 2022-2025
