Finuum is a still wine that combines tradition, technique and identity. Sourced from the same base as Perpetuum, it incorporates barrels aged under flor, creating a profile inspired by the finos of Jerez , yet marked by the freshness and precision of Bairrada.
Grape Varieties: Bical, Baga, and Cercial from vineyards on sandy and clay-limestone soils.
Tasting Notes: On the nose, it reveals dried fruits, toasted bread notes, mineral nuances and subtle saline touches. On the palate, it is dry, elegant and balanced, with lively acidity and delicate texture, leading to a long and persistent finish. A wine to be enjoyed with attention, ideal for moments of contemplation or to accompany light, refined meals. If you are looking for a wine of character, complexity and history, Finuum is a perfect choice.
Vinification: Finuum is produced using the traditional method, with aging under a veil of flor. The base wine is a perpetual blend of several older vintages, started in 2007.
Combine: Ideal with intense cheeses or richer fish such as sardines or tuna, whose texture and flavour are enhanced by the wine’s acidity and subtle salinity.
