Denomination of Origin: DOC Beira Interior
Grape Varieties: 100% Chardonnay
Vinyeards: 50 years old, producing an average of 4.000 kg/ha.
Vinification: Grapes harvested in 15kg boxes and softly pressed after a short maceration. Fermentation in used French oak barrels on the lees with "batonnâge" for 12 months.
Ageing: 60 months in bottle on the lees before "rémoage" and "dégorgement".
Tasting Notes: Aroma of bakery and buttery notes, with ripe apple. Mouth with delicate mousse, fine bubble, notes of brioche and nuts, complemented by buttery notes of Chardonnay variety. Very refreshing and long finish.
Gastronomy: Serve between 8 and 10º C. Goes well with roast suckling pig, smoked salmon, foie-gras, oysters, lobster and strong roquefort-style cheeses.
