Description: The jewel in the crown. Freshness and minerality make you want to drink it young - this wine will also age for generations.
Grape varieties: Traditional Port varieties - mainly Touriga Nacional and Touriga Franca, with a bit of Sousão from the oldest levels.
Tasting Note: Extremely complex, deep violet colour and great aromatic intensity. Dominated by dark berries with exuberant floral elements. Seductive and full bodied that it is difficult to refrain from drinking it immediately.
Winemaking: Stepped on foot in granite mills for 3 or 4 nights, with careful temperature control. Aged in oak barrels for 24 months before bottling.
Ageing Capacity: At least 20 years.
Pairing: When young wiht rich dark chocolate puddings, such as fondants. Blue cheeses such as Roquefort and Stilton. When Aged, ideally, on its own to truly appreciate the complexity. Cheese and crackers.
