Tasting Notes: Clear appearance, with a straw-yellow hue and subtle greenish reflections. Expressive nose, with delicate floral notes, white-fleshed fruit (pear, green apple), fresh citrus and a mineral nuance. Very well integrated oak, with hints of vanilla. Creamy texture, on the palate, balanced by a lively acidity. The partial barrel ageing lends volume and elegance without overpowering. Long finish, with a slight saline touch and wet stone notes. Excellent with seafood, grilled fish, light Asian cuisine, or simply as an aperitif.
Vinification: Hand-picked grapes, in the early morning, and gently pressed to preserve purity. 30% of the wine ferments and ages in used French oak barrels, adding subtle complexity;70% stays in stainless steel to retain bright fruit and crisp acidity. After fermentation, both lots rest on fine lees, with occasional stirring to enhance texture.
Ageing: 6 months, 30% in used French oak barrels and 70% in stainless steel. Regular bâtonnage on the fine lees enhances mouthfeel and brings balance to the final blend.
