Primado White is a structured, enveloping and creamy wine. Although it can be drunk from a young age, it is a wine with great longevity and potential for good ageing.
Grape Varieties: Encruzado (100%)
Tasting Notes: The citrus yellow colour with golden nuances is the result of the pre-fermentation maceration of the grapes. The initial aromatic subtlety highlights the nature of the Encruzado variety. Meanwhile, floral aromas stand out and the green pine needles that appear in the retronasal also reveal hazelnut. Unctuous and vibrant in the mouth, it reveals a freshness reminiscent of granite and citrus. The maceration of the skins and batonnage in stainless steel give structure to this wine, which so well represents Dão and the Encruzado variety.
Vinification: Pre-fermentation maceration and fermentation at controlled temperature.
Ageing: 9 months in stainless steel, 12 months in bottle.
Food Pairing: This is a non-seasonal wine that goes well with fresh food typical of the warmer seasons, such as fish and seafood, but is also suitable for pairing with some strong dishes, such as baked fish, cod, some light meats and cheeses. Serve between 10ºC and 13ºC.
Ageing Ability: Up to 10 years after harvest
Winemaker: Patrícia Santos
