The production of these wines, entitled to the IGP Setúbal designation of origin, is subject to a series of requirements that include the geographical location of the vineyard, the type of soil, the grape varieties used, the type of winemaking technology, and the minimum aging period before commercialization. These conditions lead to a quality recognized in the national and international market.
Grape Varieties: Castelão
Tasting Notes: Color: Violet Red. Aroma: Intense, fruity, an excellent combination with French oak. Taste: Round, smooth and highly concentrated. Finish: Medium.
Serving Suggestions: Served at a temperature between 16°C and 18°C, it pairs well with cheeses as well as practically all Mediterranean food.
Storage: Store the bottle lying down in a place with humidity around 60% and a constant temperature (10-20ºC), away from direct light.
Winemaking: Fermented with stems and skins in stone lagares (traditional stone vats), without temperature control. The must is pressed, and this press wine is separated. Malolactic fermentation takes place after the wine leaves the lagar in cement tanks.
Ageing: Aged in French oak barrels for 9 months, followed by 3 months in the bottle.
Expected Longevity: If stored in good conditions, it has a high probability of improving for several more years.
