Grape Varieties: 60% Cerceal, 40% Malvasia Fina.
Terroir: Vineyards located 700m above sea level in gentle hillside exposed to the southeast. Soils derived from metamorphic shale series with outcrops of quartz. Franco-sandy texture with some stony .
Tasting Notes: Color: Lemon yellow. Aroma: On the nose it reveals delicate notes of peach and apricot supported by a citrus freshness and smooth brioche. Mouth: Very fr soft and crunchy smooth, fruity and elegant leaving a delicate taste in the mouth peach .
Vinification: The grapes, harvested into 20 kg boxes, were gently crushed, without destemming, in pneumatic press, being the must immediately pumped into fermentation vats in steel o where the fermentation of the base wine took place . The wine was later bottled and placed in fresh cellar for the second fermentation according to the classic method, being after the stage in the bottle done the “ dégorgement à la glace ”.
Fermentation: In stainless steel vats with a cooling jacket at a temperature of 15ºC to 17ºC.
Ageing: In stainless steel vats for approximately 18 months and in bottles on lees for more than 24 months.
Gastronomy: Very versatile by dosage balanced by crunchy acidity that makes it suitable for all type of consumption . Serve between 8 ºC and 10ºC .
