This “Rosé de Macération” consist of allowing he grape must to remain in contact with the skins for a short while (10-12 hours in order to obtain a great expression of aromas). The natural pigments in the skins of Baga grapes begin to colour the juice and at the same time bleed off – hence the name. The Baga vineyards are 80 years old on average and planted like rose gardens. All are situated on mid slopes with Jurassic inferior chalky soils and Eastern oriented to catch only the morning sun. The valleys of these vineyards are situated in the heart of Bairrada, just in the middle between the Atlantic Ocean and the mountains, along the local Certima river.

Grape Varieties: Baga

Tasting Notes: The colour is intense deep rosé , fine velvety bubbles and creamy mousse. Dried red berry fruits, raspberry along with chalk on the nose – you are expecting somewhat dry flavours. The flavours are intense red berries, hint of dark red rose petals, peppery spices and dry red berry minerals length. This rosé “de saignée” traditional method sparkling wine is rich in taste and has a vinous terroir character which makes it particularly suitable to be served with food.

Gastronomy: It should be served at 8-10 degrees in elegant tulip-shaped glasses. A perfect and excellent aperitif with oriental and Asian cuisine.

Winemaking: The bleeding off is carried out when the scents of red fruits are adequately extracted, well integrated and in balance with the must. Spontaneous fermentation with indigenous yeast. Vinification on fine lees in traditional pipas (5-500L). Malolactic fermentation takes place. Unfined.

Gastronomy: Serve it at 10 degrees in nice tulip shape glassware, it will heavenly match with grilled lobster or big prawns and roast rare lamb or game like pigeon, pheasant or wild duck.
