Tasting Notes: Color: Deep garnet. Aroma: Complex aroma of red fruits, flowers and some spicy notes. Palate: Full-bodied, excellent structure and balance. Complex finish showing great elegance.
Vinification: Mechanical Harvested during the night. Total Destemming. Maceration before fermentation during 48h. Fermentation with controlled temperature (22ºC-28ºC) in stainless steel vats. Maceration after fermentation between 5 and 10 days. Malolatic Fermentation in stainless still vats.
Ageing: 9 months in foudre.
Gastronomy: Mediterranean food in general, pasta, lamb and soft cheeses.
