Concept: Reviving the traditional method of winemaking based on a blend of grape varieties found within the vineyards. This "field blend" enriches the wines with a multitude of aromas and flavors. The wine originates from vineyards in the São Mateus area, benefiting from the unique climatic conditions of this part of Pico Island's south coast, which impart freshness and a saline character to the wines.
Grape Varieties: Merlot, Syrah, Saborinho, Arinto dos Açores, Verdelho, and others (from old red-grape vines, over 80 years old).
Tasting Notes: Very expressive aroma of red fruits, some citrus, and herbs, with a smooth body that is very fresh and saline.
Winemaking: Selective hand-harvesting into 25kg crates. Approximately half of the blend comes from the direct pressing of whole clusters; after settling, the juice ferments at a controlled temperature using wild yeasts. The other half undergoes low-temperature skin maceration for 3 days, using destemmed and partially crushed grapes.
Food Pairing: Great gastronomic versatility, thanks to its freshness and smooth structure, ranging from grilled fish to white meats, pasta, salads, and certain red-fruit desserts.
Storage and Serving: Store between 8 and 10°C, serve between 12 and 14°C, and consume between 14 and 16°C.
