Tasting Note: From an exclusive, low-production project, Casa Cadaval Blanc des Noirs is an intense wine with delicate notes of floral and mineral aromas. It is a serious wine on the palate, with superb unctuousness and freshness, balanced acidity, and a long, elegant finish.
Winemaking: The harvest was carried out manually in mid-August into 20kg boxes, with total destemming of the grapes which were then gently pressed. Fermentation took place in stainless steel tanks with controlled temperature. The wine aged for 12 months in 500l French oak barrels of second use, and had 6 months of bottle aging.
