Each wine tells a story. In the case of Kopke Colheita, that story is unique. To savor a wine is to savor history, and in the case of this Colheita, it is to recall remarkable events such as the birth of Dolly the sheep, the first mammal to be successfully cloned from an adult cell.
Grape Varieties: Traditional Douro varieties.
Tasting Notes: Brilliant blond color with a reddish halo. Fragrant bouquet marked by the presence of almonds, honey and notes of candied orange. Smooth and velvety on the palate. Delicate, unctuous and wonderfully balanced. Elegant and persistent finish.
Vinification and Ageing: The wine-making process includes the halting of fermentation by adding the grape brandy, the blending of dierent wines and the ageing of the resulting wine. Fermentation takes place in vats (lagares) at a controlled temperature of 29°C, until the right degree of sweetness (baumé) is achieved, at which point the grape brandy is added. A wine of high quality, made from one single harvest. A Colheita wine matures in oak barrels for periods of time that can vary, but never less than 7 years. It is then bottled and sold according to the demands of the market.
Recommendations: Slightly chilled, it expresses all its finesse and sophistication when combined with desserts based on caramel, dried fruits and spices, such as caramel fondant with apple and ginger jelly, tarte tatin, crème brûlée and medium-intensity cheeses. Serve at a temperature between 12 and 14ºC.
