Vineyards: Grapes from the original vineyards, planted in 2006 by Mr. Barão Bodo von Bruemmer, located in Casal Sta. Maria.
Grape Varieties: Pinot Noir
Tasting Notes: Attractive ruby colour, with bright reflections and a shallow centre. The aroma presents vibrant notes of ripe cherry and raspberry, which evolve into earthy and balsamic nuances, with hints of mushrooms and pine. The palate is rich and with several layers of flavours, red fruit, pine needles and forest floor. The acidity lends freshness throughout the tasting and gives it the potential to gain even more complexity and depth in the bottle.
Vinification: The hand-harvested grapes underwent a rigorous selection process in the vineyard and in the winery. After the grapes were lightly crushed, they were followed by cold maceration in small open vats for 5 days. Fermentation lasted 3 weeks with daily pumping over. Once fermentation was complete, the vats were closed and kept that way for 2 weeks. The wine aged for 15 months in new and used French oak barrels of 225L and 500L.
Consumption: Should be consumed at around 16-18ºC and can be aged in the bottle for 10 years.
