Xis was born in 2019 from a search for the best white grape vineyards in the Adorigo/Barcos region in the council of Tabuaço – Douro. Very old vines, with schist soils, over 90 years old, exposure to the North between 500 and 550 meters of altitude, with mostly Malvasia Fina, among other varieties with less weight in the vines such as Gouveio, Rabigato, Dona Branca and Viosinho.
Vinification: The grapes are vinified in an oxidative way – vertical press for used barrels, where spontaneous fermentation takes place and a 1 year stage in the same, under thick lees. Partial malolactic is natural, and in 2019 it only happened in 1/3 of the barrels. After a year of aging, the wine is transferred with the same lees to a stainless steel vat, where it remains in static decantation during the winter, being bottled in the following spring by gravity without filtration and/or fining.
