The 2005 wine year was characterized by an extremely cold and dry winter. During the spring, low levels of rainfall were recorded, clearly insufficient to replenish the soil's water reserves, which were very low. The summer was marked by three heat waves (June, July and the first week of August) that caused considerable stress on the vines, with some varieties losing their leaves prematurely. The drought was alleviated by heavy rainfall in early September, which allowed ripening to complete in a balanced manner.
Varieties: Old Vines. Vines that are 60 years old.
Tasting note: Wine with a bright amber color. Excellent aromatic intensity, with soft notes of dried fruits and a subtle touch of spices, harmonized with delicate notes of honey and candied orange peel. In the mouth, it surprises with its balance, concentration, volume and structure, composed of fine-textured tannins. A seductive and elegant wine, with a complex and very persistent finish.
Winemaking: The grapes, from old vineyards, were transported in plastic food boxes and subjected to rigorous sorting at the winery entrance. After gentle crushing without destemming, they were sent to a traditional wine press where they were trodden by men at regular intervals. Wine brandy was then added, thus stopping the fermentation.
Ageing: In 550-liter national oak barrels for approximately 18 years. It was bottled without any filtration, subject to creating a slight deposit in the bottle.
