A new generation Dão wine, born from a historic estate with old vines and exceptional terroir, facing the Serra do Açor mountain range. Domínio do Açor Reserva Tinto is proof of the region's extraordinary potential: a wine of enormous elegance, purity, and mineral freshness. With consultancy from Pedro Parra and winemaking by Luís Lopes (formerly of Comtes Lafon and Quinta da Pellada), the philosophy here is clear — wines with identity, authenticity, and a deep connection to the granitic soil.
Region: Dão - Sub-region of Terras de Senhorim - Carregal do Sal (Oliveira do Conde).
Grape Varieties : 40% Touriga Nacional (best plots), 60% Alfrocheiro
Climate/Geography: Moderate continental climate, protected by mountains.
Soils: Granitic with sand, silt, quartz and parent rock.
Winemaking: Co-fermentation: in granite lagar (traditional stone trough). Total destemming (no stems in 2021, as an experiment). Malolactic fermentation: in stainless steel tanks before winter. Philosophy: minimal intervention, maximum respect for the terroir.
Ageing: Used 400–500L barrels, a small portion in new barrels (for top-quality Alfrocheiro).
Tasting Notes: Elegant and sophisticated, with a richness balanced by vibrant freshness. Aromas of spices, pepper, black berries and a deep, saline character. Fine texture, polished tannins and a luminous acidity that gives great finesse to the whole. A wine that combines the soul of the Dão region with a contemporary, precise and unpretentious interpretation. Suitable for aging, but ready to enchant.
Pairings: Game dishes, Roast lamb with herbs, Grilled meats, Wild mushrooms, Rustic and traditional inspired cuisine.
