Quinta dos Carvalhais Encruzado is a white varietal wine from the Dão region of exceptional quality, the maximum exponent of the elegance and richness of the Encruzado variety. Heir to ancient knowledge, Quinta dos Carvalhais combines experience with innovation to create very elegant wines, with flavors of intense delicacy and unique personality.
Grape Varieties: Encruzado
Tasting Notes: Citrus yellow color, clear and bright. Intense aromatically, with notes of yellow-fleshed fruit, such as peach and nectarine. Jasmine floral notes. Complex due to the good integration of the sweet notes from the barrel stage. Mouth attack with a lot of aromatic intensity, where peach aromas and floral notes stand out again. Firm and well integrated acidity. Very balanced and persistent finish.
Vinification: The Encruzado grapes arrived at the winery in 20kg boxes, being unloaded directly into the pneumatic press. After pressing the whole grapes, the must was subjected to static decantation at low temperature for a period of 24 hours. It was then sent to a stainless steel vat where fermentation began, during which it was transferred to French oak barrels of different capacities (225, 500 and 1000 liters) where the fermentation ended and aged.
Maturation: About 40% of the wine aged for 8 months in French oak barrels of different capacities (20% 225 liters; 50% 500 liters; 30% 1000 liters). The stage took place on total lees with occasional bâtonnage. The remaining part of the wine was aged in stainless steel on fine lees.
Keeping: Considered a cellar wine, it has, as such, a great potential for evolution in the bottle, either because it originates from a variety such as Encruzado, with its recognized ability to age nobly, or because it has fermented and aged in oak barrels, which give it characteristics favorable to a long and fruitful life.
Serving: It should be served between 10ºC-12ºC in large white wine glasses. Once opened, it should be consumed immediately, and, once stored under vacuum, it can be consumed within 24 hours.
Enjoy: Ideal to drink as an aperitif or to accompany more elaborate fish dishes, smoked fish, white meat or poultry dishes. It perfectly accompanies a typical roast kid of the region. Suitable for Vegetarians: Yes. Suitable for Vegans: No. Without gluten.
Integrated Production: The grapes used in this wine were produced in accordance with the Integrated Production of Sustainable Agriculture guidelines, as defined by the International Organization for the Biological Fight against Harmful Organisms (OILB/IOBC). Strict compliance with these practices is certified by an independent organization recognized by the Portuguese State.
