Tasting Notes: Appearance: Bright, medium-intensity ruby ​​color with slight viscosity. Aroma: Medium-intensity, with fresh red fruits such as raspberries and strawberries, as well as black fruits such as cherries and blackberries, and stone fruits such as plums. Besides the fruit, the wood stands out, very well integrated, along with aromas of spices such as vanilla, chocolate, and black pepper. Notes of mint and a limestone touch very characteristic and unique to the Bairrada region are also evident. Palate: Dry wine, with strong but well-polished tannins of medium intensity. The pronounced acidity induces salivation. Alcohol is medium, and the wine displays elegance, with fresh red fruits noticeable, but what stands out is the mineral sensation of limestone and the clean palate. A wine with some complexity and a long finish. The key word for this wine is elegance. A notable improvement over 2020: a more refined wine, more incisive in its pursuit of freshness, clean fruit, and Bairrada personality. Less sweet and with less body than the previous wine, this is a high-quality wine that, in my opinion, will be talked about. The potential is clear.

Vinification: This red wine is produced from grapes of the Baga and Syrah varieties, from old vines, with an average age of 40 years located in Ventosa do Bairro at 100m above sea level and an average production of 5.2 tonnes/hectare. Harvesting is manual with prior selection in the vineyard, ensuring the quality of the fruit. Vinified separately, the process begins with maceration for 12 days at a controlled temperature of 16ºC. After fermentation, the wine ages for 6 months in French oak, followed by an additional period of 36 months in the bottle for refinement.

Pairing Suggestion: This wine pairs well with red meat and some fatty dishes, thanks to its firm tannins. Perfect pairings include roast pork belly, mushroom risotto, and asparagus.

Serving Suggestion: Decant / 14ºC-16ºC

Conservation: Store bottle lying down in a cool, dry place, protected from light.
