Grape Varieties: Old Vines

Vinification: Manual harvest in 20 kg boxes. Reception of the grapes with destemming and crushing in a press using the traditional foot-treading process. Start of alcoholic fermentation in mill and final in stainless steel vats. Part of the blend underwent post-fermentation maceration. Malolactic fermentation took place in stainless steel vats.

Ageing: French oak barrels for 12 to 15 months.

Gastronomy: This wine goes well with red meats of rich, mild flavors, some structural and fat fish. Roasted, confit, and sauté food, with garnishes of tomatoes, mushrooms, and autumn vegetables.
