Grape Varieties: Rabo de Ovelha e Castelão.
Tasting Notes: Cherry red color. Light but complex, fruity aroma, an excellent combination of natural aromas with some rusticity. Fresh, deep flavor and with great volume in the mouth. Long, elegant finish and aromatic finish.
Gastronomy: Served at a temperature between 12ºC and 14ºC, it goes well with meat and cheese dishes.
Vinification: This wine is the result of our decision to take advantage of some Rabo de Ovelha masses which were subsequently fermented with Castelão must for 8 days in a micro mill with temperature control, followed by 3 decantations and finished the malolactic fermentation in used barrels.
Expected Longevity: If kept in good condition it has great possibilities for improvement over a few more years (more than 10 years).
