The previous COLINAS CHARDONNAY.
The 61 hectares of the property are spread across the fabulous clay-limestone soils that dominate the gentle hills of this farm. The entire vineyard is worked entirely in dry farming. Here, the most important white grape variety in the world, Chardonnay, is produced and vinified in a gravity-fed winery. In addition to the estate's iconic white wine, Principal, another wine is produced that takes advantage of the wonderful characteristics of these limestone soils and this variety: Calcario3 from Principal Chardonnay.
Terroir: Atlantic-influenced climate, protected by the Caramulo and Buçaco mountain ranges. Vineyards planted at high density (5,555 vines per hectare) on gentle hills with clay-limestone soils, in the region's famous limestone area. Vines are entirely rainfed.
Grape Varieties: 100% Chardonnay
Winemaking: Light pre-fermentation cold maceration. Gentle pressing in a "Coquard" press. Fermentation by parcel, in stainless steel with temperature control, then transferred to 300-liter French oak barrels (5-15% new) where fermentation finishes and aging begins. Bâtonnage only in the first few months (4 to 6 months). Malolactic fermentation may occur in some barrels. Aging in barrels lasts between 6 and 9 months, then transferred to large 2000-liter used oak vats (French oak) where it remains for about 3 months until bottling. It is released to the market within 2 months of bottle aging.
Tasting Notes: Lemon yellow with a slight greenish hue. Captivating aroma of burnt match combined with tropical and wet stone aromas. Medium body, vibrant acidity and linear minerality that dances on the palate, giving a sensation of "spring water" that remains until the end.
Serving: Serve between 8-10°C. Decant for about 30 minutes before serving.
Storage: Store in a cool place (12 to 14°C) protected from light, without large temperature fluctuations.
Longevity: It is ready to drink, but will evolve positively until 2026-28.
Gastronomy: Excellent to accompany roasted meat or fish, kid goat, roast beef and aged meats.
